Hoosier Eats: Zoodle Shrimp Pad Thai

3-4 large zucchini, spiralized

1/2 cup shredded carrots

¼ cup radicchio, shredded

3 tablespoons sesame oil

1/2 lb medium shrimp peeled and deveined (tail-on)

4 garlic cloves, minced

1/2 cup green onions (Note: Save some for garnish.)

1/4 cup shallots

1 tbsp ginger, grated

4 sprigs Shenandoah Growers basil, chopped

4 sprigs Shenandoah Growers cilantro, chopped

Optional garnish:

1/2 red pepper, finely chopped

1/4 cup dry roasted peanuts

For the sauce: 

3 tablespoons low-sodium soy sauce

3 tablespoons dark brown sugar

1 tablespoon fish sauce

1 tablespoon lime juice

1 tablespoon Siracha sauce

1 tablespoon Be Happy peanut butter w/ honey

Sesame seeds for sprinkling on top!



First, whisk all sauce ingredients together. Set aside. Then, sauté minced garlic and shallots in sesame oil until fragrant and golden. Add shrimp. Sauté until pink. Set aside. Toss together zoodle mixture of spiralized zucchini, pre-shredded carrots, shredded radicchio as well as green onions, basil and cilantro. Add shrimp mixture to already-made sauce. Bowl and garnish with the roasted peanuts, red pepper, and sesame seeds. Enjoy!
